And tell me about a good starter motorcycle for someone around 6'4" who wants to ride it in town and occasionally freeway. Say... in the 5-600 cc range.

Honda CRF250l was built for you. And yes, it's fast enough.

This. Honda makes great bikes (my 33-year-old still runs like a charm), and displacement is not nearly as critical as it's cracked up to be. For a starter, 250 is plenty, 500 is the top edge.

Depends on your style. Honda and Yamaha both offer super solid starter bikes:

Honda Rebels have been the very best starter bike for like 25 years. I know you think you need/want 500cc+ but for a starter bike, but the Rebel will be everything you need. They hold their value extremely well too, if/when you decide to upgrade. Might as well get a new one.

The Yamaha V Star 250 is another solid choice. I had a friend who learned on one. Reliable, durable, and got like 80 mpg.

If this is more your look, the Ninja (green one) is absolutely the best out there. You can get it in anything from 250-1000+ and it offers ABS on models starting with only 300cc.

Anyway, things to consider. Go through your motorcycle training course and use their bikes to get a feel for what you like!
